Taco Tuesday’s Must-Have Summer Recipes

image.w174h200f3Taco Tuesdays are great celebrations to enjoy tacos and margaritas! A rush of people will come in after work to grab Mexican food that comes with great deals. Here are some must-have-recipes for your restaurants during Taco Tuesday:

 

Many customers will come to socialize with friends or a date. Let’s focus on the key food items to suite their meal.

 

Appetizers:

Ingredients (For a 2 cup serving) :

  • 2 avocados
  • 1 tomato
  • ½ onion
  • 1 garlic clove
  • 2 tablespoons of cilantro
  • 1 lime
  • salt and pepper

 

Directions:

Peel the avocado and cut it into chunky pieces. In a bowl, add the avocado chunks and the chopped up the tomato, onions and cilantro.  Next you will add the minced garlic clove and squeeze the lime juice.  Carefully mush and mix everything together. Then add salt and pepper to your taste.  Make sure to not over mix, you want to be able to feel avocado chunks in the guacamole.  Cool for at least 20 minutes and you are ready to serve.

CHIPS AND SALSA are a classic with any meal:

Ingredients(Serving size: 3 cups) :

    • 2 cups of chopped tomatoes
    • ½ bunch of cilantro leaves
    • 1 jalapeno (seeds removed)
    • ⅓ cup of bell pepperchips-and-salsa
    • 1 tablespoon of lime juice
    • ⅔ cups of chopped onion
    • salt and pepper

 

Directions: Stir everything together gently.  Mix well. Then refrigerate for 20 minutes.

NACHOS:

Ingredients (Serving Size: 12) :

    • tortilla chips
    • 1 pound of beef
    • 2 cups of beans
    • 2 cups shredded cheeseNachos
    • 1 diced jalapeno
    • 1 diced onion
    • 1 cup salsa
    • 1 cup sour cream
    • 1 cup guacamole
    • salt and pepper

Directions: Depending on what kind of beef or ingredients you use you will want to oven it differently so adjust to your specialty recipe. The key is to have your own recipe that differentiates you from generic tacos, so play around with it. These ingredients are your basics, but feel free to add others such as corn, guacamole, chicken etc.

Meals: TACOS

Ingredients (Serving Size: 4 Tacos):

  • 1/4 cup reduced-fat sour cream
  • 2 tablespoons lime juice
  • salt and ground black pepper to taste
  • 1 jalapeno pepper, halved lengthwiseernesto-tacos
  • 2 1/2 cups shredded red cabbage
  • 4 green onions, thinly sliced
  • 2 tablespoons olive oil
  • 1/2 cup chopped fresh cilantro
  • 8 (6 inch) flour tortillas

 

Directions:  Use 8, 6 inch, flour tortillas to wrap these ingredients in. Then get creative by making fish combinations, beef and chicken. Change up the recipe for each taco so that your customers will want to try them all!

Drinks:

Here is a simple Margarita recipe that can be your base. With this recipe you can play around with it to make different flavors (syrups) or add different liquors to it.

 

MARGARITAS:

Ingredients (Serving Size: 1) :

  • 1.5 oz. silver tequilamargarita
  • 1 oz. Cointreau or Triple Sec
  • 1/2 oz. lime juice
  • 1 Tablespoon of syrup (optional)
  • salt rim

Directions: Pour all of the ingredients into an ice-shaker. Shake well until drink is chilled. Serve on a salt rim glass.

Now you are ready to take on the hungry Tuesday night crowd. Just remember, you will have a lot of customers, so give them so good deals to enjoy with the fantastic food.
