Achieve an Authentic Oktoberfest Experience in your Brewery

This is the second in a two part series giving brewery owners advice on how to maximize business this Oktoberfest.   Customers will be heading to breweries in droves this year to celebrate Oktoberfest. As a result the competition to attract customers will be stiffer than ever before. One way to make sure your brewery stands out is to give your customers the most authentic Oktoberfest experience possible. Here’s three ways that will help you do that. Serve Traditional German Food Outside of the beer, the next most important part of any Oktoberfest celebration is the traditional German food. Giant pretzels, currywurst, and sauerkraut are all favorites at the original festival. Other traditional favorites your could serve include:

Asian Barbecue That Customers Will Eat Up

Asian cuisine is mainly based on rice, mixed vegetable and their meats! With that being said, there has been an increase in popularity with Asian and Korean BBQ. The perfect summer eats:


Galbi, referred to as rib or galbi san modifiers as pieces of marinated meat, is a very popular dish for dinner meals.  Typically marinated in soy sauce, garlic and grilled is the perfect preparation for it. When finished preparing, it is mixed in with vegetables, sauces and can add other topping like sesame and green onion.  This creates a very flavorful yet healthier meal then most because it is not as greasy as other Asian foods.

Bulgogi is another token Korean barbeque meat where the dish usually consists of grilled marinated beef.  The marinade for these two dishes are similar, but the final meal taste so much different.  The difference between Bulgogi and Galbi is that this one’s meat is thin sliced and has a different cooking method. Bulgogi gets prepared  hibachi grill, broiled in the oven, or pan-fried.

The three main components to delicious bulgogi is 1. good cut of beef 2. special marinade 3. cooking method.

The good cut of beef refers to the quality and type of beef.  For the best taste, you must use marbled meats- steak examples are sirloin, tenderloin or skirt steak.

The marinade will separate your restaurant from others, so experience and test different recipes to find the best one. Lastly, the best method to cook the beef is to grill it over charcoal.  This will allow the marinade, its juices and fats to all drip off of the meat and onto the coals, burn there, and then the smoke that comes out with create that rich flavor for your meat.

If not grilled, it is very simple to marinate the wings and then place them in the oven for an hour and fifteen minutes under 375 degrees. Japanese Kobe Beef

The cooking instructions for the Japanese steak or roast starts with the preparation to be medium rare or rare. The delicious key of the dish comes from the tender, juicy, flavoring of the steaks aroma and taste. That is why it cooked very shortly and on light temperature. The goal is to keep all of the juices inside, that means avoid using a fork to easily form holes. The meat is very tender so it is important to keep the juices for the delicious flavoring.

The recommended cooking time is to set the oven on 450 degrees, then bake the roast for 15 minutes- until outside browns. Then reduce heat to 350 degrees and cook for another 15 minutes. Lastly, the most important step, allow the meat to sit for 10 minutes before cutting and serving.

Taco Tuesday’s Must-Have Summer Recipes

image.w174h200f3Taco Tuesdays are great celebrations to enjoy tacos and margaritas! A rush of people will come in after work to grab Mexican food that comes with great deals. Here are some must-have-recipes for your restaurants during Taco Tuesday:


Many customers will come to socialize with friends or a date. Let’s focus on the key food items to suite their meal.




Ingredients (For a 2 cup serving) :

  • 2 avocados
  • 1 tomato
  • ½ onion
  • 1 garlic clove
  • 2 tablespoons of cilantro
  • 1 lime
  • salt and pepper



Peel the avocado and cut it into chunky pieces. In a bowl, add the avocado chunks and the chopped up the tomato, onions and cilantro.  Next you will add the minced garlic clove and squeeze the lime juice.  Carefully mush and mix everything together. Then add salt and pepper to your taste.  Make sure to not over mix, you want to be able to feel avocado chunks in the guacamole.  Cool for at least 20 minutes and you are ready to serve.

CHIPS AND SALSA are a classic with any meal:

Ingredients(Serving size: 3 cups) :

    • 2 cups of chopped tomatoes
    • ½ bunch of cilantro leaves
    • 1 jalapeno (seeds removed)
    • ⅓ cup of bell pepperchips-and-salsa
    • 1 tablespoon of lime juice
    • ⅔ cups of chopped onion
    • salt and pepper


Directions: Stir everything together gently.  Mix well. Then refrigerate for 20 minutes.


Ingredients (Serving Size: 12) :

    • tortilla chips
    • 1 pound of beef
    • 2 cups of beans
    • 2 cups shredded cheeseNachos
    • 1 diced jalapeno
    • 1 diced onion
    • 1 cup salsa
    • 1 cup sour cream
    • 1 cup guacamole
    • salt and pepper

Directions: Depending on what kind of beef or ingredients you use you will want to oven it differently so adjust to your specialty recipe. The key is to have your own recipe that differentiates you from generic tacos, so play around with it. These ingredients are your basics, but feel free to add others such as corn, guacamole, chicken etc.

Meals: TACOS

Ingredients (Serving Size: 4 Tacos):

  • 1/4 cup reduced-fat sour cream
  • 2 tablespoons lime juice
  • salt and ground black pepper to taste
  • 1 jalapeno pepper, halved lengthwiseernesto-tacos
  • 2 1/2 cups shredded red cabbage
  • 4 green onions, thinly sliced
  • 2 tablespoons olive oil
  • 1/2 cup chopped fresh cilantro
  • 8 (6 inch) flour tortillas


Directions:  Use 8, 6 inch, flour tortillas to wrap these ingredients in. Then get creative by making fish combinations, beef and chicken. Change up the recipe for each taco so that your customers will want to try them all!


Here is a simple Margarita recipe that can be your base. With this recipe you can play around with it to make different flavors (syrups) or add different liquors to it.



Ingredients (Serving Size: 1) :

  • 1.5 oz. silver tequilamargarita
  • 1 oz. Cointreau or Triple Sec
  • 1/2 oz. lime juice
  • 1 Tablespoon of syrup (optional)
  • salt rim

Directions: Pour all of the ingredients into an ice-shaker. Shake well until drink is chilled. Serve on a salt rim glass.

Now you are ready to take on the hungry Tuesday night crowd. Just remember, you will have a lot of customers, so give them so good deals to enjoy with the fantastic food.
